Fr him, it really cmes dwn t ne imprtant thing: “Rather than think abut what yu want t ck, lk at the remainder, what’s available, and then make a menu. This is what every ck shuld d.”
He’s clear n his slutin. “Lse that fanciness, and lk at the quality f the prduct and the flavr (味道),” Rudlf explains. “There are t many cks wh are trying t make their dish t fancy. They want t have nly the biggest sea fish. Or they make a dish with nly the heart f the cabbage, nly using the best leaves, and then they thrw away the rest.” He shakes his head at the idea f such waste.
He knws that ne f his suppliers — a lcal farm — is left with a grwing fd muntain when tp Michelin-starred cks nly buy the prized cuts f meat instead f rdering the whle leg. In just three r fur weeks, the farm is left with 1,000 legs f lamb in the freezer. “And that’s just ne supplier,” he says.
While ther cks will nly accept the best ingredients (原料) frm their suppliers, if smething is smaller r damaged r has a few black bits, Rudlf is still ging t use it. “Just because I’ll accept prduce f a slightly lwer quality desn’t mean I’m ging t serve fd f a less quality. The biggest criticism (批评) f scial netwrking is that ur yung peple are lsing their ffline friends t nline friends. In fact there is a lt f research that shws these criticisms are generally unfunded. Research by the Pew Internet and American Life Prject fund that peple are nt replacing ffline friends with nline cmpanins but are using them t supprt their ffline relatinships.
Hwever, there is ne part f scial netwrking that is deeply wrrying. We find urselves in a hyper-cnnected wrld where peple access scial media day and night, excited t make annuncements abut the tiniest details f their lives. Research is starting t shw that this culture is negatively affecting nt ur friendships but ur character.
Prfessr Larry Rsen, in his bk iDisrder, says that yung peple wh veruse scial netwrking sites can becme vain, aggressive. But perhaps an even mre disturbing effect is that ne f ur mst basic emtins seems t be disappearing - empathy. This is the emtin that bnds us tgether; it allws us t see the wrld frm ur friends pints f view. Withut it, we are far less able t cnnect and frm meaningful adult relatinships.
Sherry Turkle, a prfessr f Scial Studies f Science and Technlgy at MIT, suggests that peple are n lnger cmfrtable being alne. This is smething cnfirmed by a study where 200 university students were asked t g withut scial media fr 24 hurs. Many admitted an addictin t their nline scial netwrk; mst cmplained that they felt cut ff frm their family and friends. But being alne is a time, Turkle argues, when we self-reflect and get in tuch with wh we really are. It is nly when we d this that we can make meaningful friendships with thers. She believes, as is the title f her bk, that we are simply “Alne Tgether”.
These ptential changes in ur characters are rather disturbing. If nthing is dne, ur yung peple culd well be in truble. Therefre, suggestins abut ways t encurage ur yung peple t avid the prblems f scial netwrking shuld be made, s they can develp the kinds f friendships that are required t grw int well-adjusted and happy adults.

B. By aviding the prblems f scial netwrking.
C. By reflecting and getting in tuch with urselves.
D. By having discussins with a much mre diverse set f peple.

Human activity has shrunk the size f wild animals the wrld ver, and yet recent research has fund many mammals (哺乳动物) living near cities have becme steadily larger, bth in length and in weight.
“That wasn’t what we expected t find at all,” says Rbert Guralnick, wh studies bidiversity infrmatics at the Flrida Museum. Expanding urban envirnments grw much htter than natural habitats (生长环境), and warmer temperatures usually benefit mammals that have a smaller, mre energy-saving figure — a principle f bilgy knwn as Bergmann’s rule.
As the wrld grws warmer, sme scientists have wrried that mammals living near cities are suppsed t grw smaller, pssibly reducing their fitness as a species and, n dubt, the fitness f being threateners (威胁者), t. But even with climate change, that might nt happen. As it turns ut, there’s anther factr in determining a mammal’s size that might cmpete with r even g beynd temperature, and that is fd.
In and arund cities with large ppulatins, where high-energy human fds are mre widely available and hunters are fewer and farther in between, new research discvered that mst f the mammal species studied appear t be grwing in size, nt shrinking. Accrding t careful measurements f mre than 100 species frm Nrth America, gathered frm museum cllectins ver the past 80 years, the main reasn is nt a city’s temperature. Instead, the greatest increases in weight and bdy length appear t lie amng thse mammals that live near the mst humans, regardless f hw ht their surrundings are.
As climate change grws wrse, there is, f curse, the pssibility that that might change, but at least fr nw, it seems that wlves, deer, bats, and ther mammals in Nrth America culd be affected mre by city ppulatins than city climates.
If we want t preserve the mammals that exist tday fr the future, it’s imprtant that we knw hw human civilizatin is shaping their size, behavir and well-being. In a rapidly changing wrld, that knwledge culd mean the difference between nging life and dying ut.
12. What finding des Rbert Guralnick cnsider surprising?
A. Urban envirnments are htter than nature.
B. The animals in natural habitats becme smaller.
C. Many mammals grw against Bergmann’s rule.
D. City temperatures cause animals t shrink in size.
13. Why d many mammals living near cities grw in size?
A. They are well taken care f by z keepers.
B. They have mre fds and fewer threats.
C. They are cmfrtable in warmer climates.
D. They can easily hunt wild animals fr fd.
14. What are we advised t d t prtect the existing mammals?
A. Prvide healthy fd t surrunding mammals.
B. Limit the ppulatin in cities t a small number.
C. Knw hw human civilizatin affects mammals.
D. Help the mammals adjust t the changing climate.
15. What can be a suitable title fr the text?
A. Human Activity Has Shrunk the Size f Animals
B. Glbal Warming Is Shaping the Future f Mammals
C. Mammals in Nature Have a Better Chance t Survive
D. Many Mammals Living Near Cities Are. Grwing Bigger
